Orange Almond Salad
Ingredients:
3-4 oranges, peeled and sliced into ½ inch cubes
2-4 heads of Romaine lettuce (about 4 cups)
½ small red onion, sliced thin
3/4 cup sliced almonds
1/2 teaspoon organic canola oil
1/2 teaspoon salt
Garnish optional: ¼ cup roasted pumpkin seeds
Directions:
Preheat oven to 350 degrees F.
Measure out the sliced almonds into a small bowl and drizzle 1/2 tablespoon canola oil over them and mix well.
Line a small cookie sheet with parchment paper and spread the almonds out. Sprinkle the almonds with the 1/2 teaspoon salt. Place in oven and bake for about 10 minutes or until the almonds begin to turn golden brown. Remove them from the oven and let cool.
Peel the oranges and chop them into bite sized pieces.
Rinse and chop the lettuce. Pat dry with a towel and once chopped, place into a medium sized bowl.
Create the dressing and drizzle over the chopped lettuce. Mix well.
Place the lettuce onto 4 salad plates evenly. Top with almonds and oranges. Garnish with pumpkin seeds.
Dressing:
¼ cup organic, virgin olive oil
¼ cup orange juice, fresh squeezed is best
1 teaspoons white wine vinegar
½ teaspoon sugar or agave nectar
½ teaspoon salt
½ teaspoon garlic powder
¼ teaspoon ground black pepper
Mix all ingredients in a small jar with lid and shake well. Add to salad and toss.
Waldorf Salad
Ingredients:
6 cups spring mix lettuce
1 cup red grapes, sliced
1 medium-sized honey crisp apple, sliced thin
2 stalks celery, sliced
½ red onion, sliced thin
½ cup chopped walnuts
Yield: 4, 2 cup servings
Dressing:
2 tablespoons olive oil
1 tablespoon white wine vinegar
1 teaspoon agave nectar
½ tablespoon lemon juice
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon ground black pepper
Directions:
1. Rinse, dry, and chop the lettuce and place in medium sized bowl.
2. Rinse grapes and cut them in half. Set aside.
3. Rinse and slice apples. Set aside.
4. Rinse and slice celery and onions. Add them to the lettuce bowl.
5. Prepare dressing – combine all dressing ingredients in a 6-ounce jar with lid and shake to mix well.
6. Drizzle the dressing over the lettuce leaves and mix well to be sure all leaves are covered with dressing.
7. Divide the lettuce into 4 servings and place on serving plates. Top each with grapes, apples and walnuts.
